One of my favorite things to do is to open the window above the sink, listen to music and see how many different vegetables I can combine in one dish.
Routine dinners can get old and boring. However, one way to guard against that is to not only try vegetables you never have, but to combine vegetables you have never combined before.
Take it one step further and add a fresh herb that you do not typically cook with with! These are several steps that can keep dinner exciting and nutrient dense.
I recommend to make a list of vegetables that you have not tried. Try to incorporate one new one each week!
Combining turnips, lentils, zucchini, peppers and onion with scallions and fresh herbs reaps quite a distinct and unique flavor combination that is wonderful! Get creative, you will not regret it!

The lentils combined with brown rice are a complete protein source!
